KETO CHICKEN TIKKA PIZZA – WITH FATHEAD CRUST

CHICKEN TIKKA. ON A PIZZA. THAT TOO, KETO. Reality! You are definitely not dreaming! This delicious and finger lickin’ pizza is just what you need in your life. Trust me – keto or NOT! Did I mention, it takes only about 10 mins to prepare and no kneading, whatsoever!?

Hello my lovely friends! How are you all doing? It feels like I have been away for so long. Honestly, I don’t have an excuse for being away this time. At least not a ‘justified’ one. The truth is, I have been spending most of my time these past few weeks singing! I am hiding my face (hypothetically!) while I write this.

I am a very shy person, contrary to popular belief. And to top it, I am extremely critical of myself and I am constantly questioning things that I do. Add to it my perfectionist streak. Yea, that’s a match made somewhere between heaven and hell! So when I get my mind stuck somewhere, it takes me a lot of time and effort (seriously) to get out of the trance that I get into. Because I am always unsatisfied and constantly trying to get better. Now that – is a recipe for ‘time lost’!

Please tell me I am not the only one to be stuck in this whirlpool!

Surely, some of you must be wondering about the ‘singing’ part I mentioned above. I am a bathroom singer, but to almost an extreme. I LOVE to sing. Since forever. Sometimes, I really wish I had taken singing training during my growing up years. Heck, sometimes I even wonder that I were in India at this time of my life, I would have definitely joined some singing classes or vocal training of some kind. Anyhow, what’s taking up most of my time and brain space is an app called ‘Sing! by Smule’. I. Am. Hooked.

I spend a lot of time singing hindi songs on there.

Don’t they say, if you lose track of time doing something, keep doing that ‘something’! So, I guess it is a good thing for me!

Anyway, coming to what this post is all about. Keto friendly Chicken Tikka Pizza made with Fathead crust. I had some juicy chicken tikka marinating in the fridge, which by the way comes together in a jiffy, and decided to use that for a keto friendly pizza.

I had made a fathead pizza a few months back too and I really liked it. So now that my craving for a pizza was at its peak, I decided to finally break my trance (read: singing spree) and make us some Pizza!

For those not familiar, fathead pizza is made with mozzarella cheese, almond flour, cream cheese and eggs. That’s it. That also means that there is no kneading involved since we are not using any ‘flour’. I am not really sure who invented this crust. All I know is that it tastes delicious and everyone should substitute their normal pizzas with this one. At least, everyone should try once.

For keto-ers, this is a blessing!

Juicy chicken tikka morsels with mushrooms, bell pepper and red onions on top of delicious and cheesy crust. Tell me, your mouth isn’t watering!

Oh, do you see how beautiful that crust looks?! Just like the real deal!

You can find a lot of videos on YouTube for making Fathead dough. I don’t know where I got my recipe, but I am going to share it with you anyway.

So without further ado, let’s jump right to the recipe.

Instructions
For the chicken tikka
  1. Mix all the ingredients together and let them marinate for at least 15 minutes.
  2. Preheat oven to 425F. Line a baking sheet and put a wire rack on it.
  3. Arrange the marinated chicken pieces and bake for about 20 minutes or till the chicken is done (the centre of each chicken piece should no longer be pink). I like to broil the chicken for 5 minutes out of the total time.
  4. Set them aside.
For the crust
  1. In a large microwave safe bowl, add the mozzarella and the cream cheese. Microwave for about 90 seconds to 2 minutes, till the cheese has melted.
  2. Mix well using a wooden spoon.
  3. Add the almond flour and the eggs and mix well. If the mixture becomes too stiff while mixing, push it in the microwave for a few seconds to loosen it up again.
  4. Mix everything well and add seasonings of your choice if you want to. The 'dough' should be a little sticky.
  5. On a pizza stone or a pizza sheet lined with parchment paper, spread the 'dough' using your hands. Please wet your fingers with water. Without this, you will not be able to manipulate the dough. Keep wetting your fingers and spreading the dough into whatever shape and thickness you want.
  6. Poke holes with the help of a fork and bake at 425F for 8-10 minutes.
Assembling
  1. Once the crust is ready, spread the tomato sauce and one layer of cheese.
  2. Add the chopped chicken tikka pieces and the vegetables.
  3. Sprinkle some more cheese on top.
  4. Bake at 425F for about 10-12 minutes or till the cheese on top melts and becomes a little brown.
  5. Remove from oven and enjoy hot!
