I feel like a beating drum when I talk about rice. I miss rice. No matter how ‘brave’ I try to look in front of my husband when it comes to the topic of cravings, deep down (well, almost beneath the first layer of pretending!) I die a little bit inside when I see someone eating rice. I miss it a lot!

And then I saw on Pinterest, Facebook and every other social media, how people are going crazy about Cauliflower rice, also called Cauli Rice. And I obviously couldn’t wait to try it!

Now, there are a couple of ways you could go about it. First method is to take a head of cauliflower, chop it into florets and then pulse it in a food processor till you get very very tiny pieces of cauliflower. The important thing is not to over do this. You definitely don’t want a cauliflower paste! And then you can either steam the ‘rice’ for 5 minutes or dunk them in boiling water for 2 minutes or even pop them into a microwave for 2-3 minutes till the become slightly tender. You DO NOT want to overdo this step as well. Keep in mind, since the cauliflower now is really tiny, it won’t take long for it to cook. You would still want it to have a little bit of bite to it.

The second method is to skip everything I said above till the food processor bit and instead buy a bag of ‘riced’ cauliflower from your local grocery store! Easy peasy. And then you can steam it, or boil it or microwave it to cook them halfway through.

Now let us talk about the versatility of Cauliflower ‘rice’. You could make fried rice with just some garlic and butter. Or you could do just as I did. Some spicy chicken and some vegetables of your choice! You can experiment with spices and sauces, but if you are eating keto, make sure the sauces are keto approved.

So let me be honest. Though, Cauliflower rice is a consolation for the normal rice, it does not taste anything like it. But still, I enjoy the taste and sometimes, it helps to fool your mind! Haha!

Instructions
  1. In a bowl, marinate the chicken with all the spices and sauces for about 10-15 minutes. This is not necessary but it definitely makes a difference.
  2. 'Rice' the cauliflower if you are going from scratch. Pulse small florets in a food processor till the cauliflower becomes really tiny and looks like rice. If you are using store bought Riced cauliflower, skip to the next step.
  3. Microwave the cauliflower for about 3 minutes. Don't overdo this. The cauliflower should still have a bite to it.
  4. In a wok, heat the ghee. Add the chicken and cook on high heat till it is done. Remove to a plate.
  5. In the same wok with the leftover ghee, add the minced ginger first. Sauté for about 3- seconds. Then add the garlic and sauté some more.
  6. Add the chopped red onions and green chillies. Sauté for about 1 minute. I like some bite in my onions.
  7. Add the chopped bell peppers also and cook till they are almost 80% softened.
  8. Add the cooked chicken, salt to taste, liquid aminos, chilli garlic sauce and red chilli powder. Mix well till everything is well coated.
  9. Increase the heat to high and add the riced cauliflower.
  10. Cook on high heat for about 5 minutes. Be careful not to overcook the 'rice' as it will become soggy and it's not going to be fun!
  11. Garnish with green onions and enjoy!
